Dr. Athanasia Matemu

Dr. Matemu is a Senior Lecturer in the Department of Food Biotechnology and Nutritional Sciences (FBNS) at Nelson Mandela African Institution of Science and Technology (NM-AIST). With more than 8 years of research experience, Dr. Matemu has been involved in multidisciplinary research and outreach activities. She is currently the acting Head in the Department of FBNS; Head, Quality Assurance Unit (QAU), also a co-founder and member of the Kibong'oto, Nelson Mandela - AIST and CEDHA Research and Ethics Committee (KNCHREC).

Her background is in food biotechnology/functional foods and research interest lie in the areas of food processing [(Post-harvest management & value addition to agro-products), underutilized food resources (Edible wild mushrooms & Insects)] and Food safety/foodborne pathogens. Specifically, she is interested in exploitation of underutilized food resources. She has supervised 1 PhD student and 8 master’s students to successful completion. Currently, she is supervising a number PhD and master’s students. Dr. Matemu has published over 20 papers international peer review journals and gave more than 20 presentations in international conferences. She is also an instructor for different subjects under the field of food science and biotechnology.
